The Great Slovak Cheese War of 1996


I grew up with mom's bean soup in early summer when the beans were at the market. Mom still lives with me and this summer i once again attempted to try it. The secret is in the "zaprazka" (for those who don't know what this is, it is called a roux in most cookbooks.

Fill large dutch kettle with 2 quarts water. Add sausage (cut in 3# pieces) and beans (cut up). Bring to boil lower to medium and cook for about one half hour. Add diced potatoes and salt and cook another half hour.

In small saucepan melt lard, add flour, paprika, pepper and garlic. Mix well and acook over med heat for about 4-5 min. Add this mixture to soup and mix well. Add vinegar and simmer for 5 min.

In cream carton mix 1 tbsp flour and pinch of baking soda. Add to soup and bring to boil simmer 5 min and serve. Believe me, my nephews visit and they love their nanas (and now mine) bean soup. ENJOY!
