Cold Dough Kolac

I have the recipe for nut roll and Kolac Dough (Delicious Cold Dough Recipe).

KOLAC

8 cups flour
12 egg yolks
1 tsp. salt
2 cake yeast (2 ounces)
1 1/2 lbs. shortening
(butter or margarine)
1 pint sour cream

Sift flour. Crumble in yeast and add yolks, salt and sour cream. Knead until smooth. Put in refrigerator over night. Roll out on lightly floured and sugared board. Cut into squares, fill with any desired filling. Fold over twice, cut small slits along one side. Bake 30 mnutes in 325-F oven.

Apricot and Pineapple kolacky

6 cups flour
1 lb. shortening
3 eggs
1 cup cream, or canned milk
1 cake yeast
1 tsp. vanilla
pinch of salt

FILLING
1 lb. dry apricots, cooked
1 small can pineapple, drained
Sugar to taste

Sift flour and salt, cut in shortening until it looks like cornmeal. Add eggs, cream, yeast and vanilla. Beat with hand until dough forms into a ball and hands are clean. Place in refrigerator over night, or for 6 hours. Cover board with granulated sugar. Roll out small portions of dough at a time. Spread filling, roll up pieces, or fold over. Bake at 350-F about 10 to 12 minutes.

Some roll the dough in small individual balls and press the center with their thumb and place the filling in the thumb print of the cookie. Also you can sprinkle them with powered sugar lightly.

Recipe for Nut Roll:

1/2 lb butter
1/2 lb margarine
1/2 pint sour cream
1/2 cup warm water
1 large can evaporated milk (warm
6 egg yolks or 3 whole eggs
3 tbs. sugar
1 tsp. salt
1 oz. cake yeast
Grated rind 1 lemon
About 10 cups flour

FILLING:
1 lb ground walnuts
1/4 cup milk
2 tbs. melted butter
1 cup sugar

Melt shortening, cool. Add warm liquids, blend, then add sour cream. Add yolks or eggs, one at a time, stirring after each additio. Add crumbled yeast and lemon rind. Sift dry ingredients and gradually add to first mixture, blend well. Turn out onto floured pastry cloth and knead until smooth. Form into ball and refrigerate over night.

Divide dough into 8 pieces. Roll very thin, and spread with filling. Roll into long rolls, seal ends and place on greased cookie sheet. Allow to rise about 20 minutes. Bake at 375-F for 30 to 35 minutes.

Filling: Combine all ingredients and spread on rolled out dough.
